1 can (14 oz) coconut milk (full-fat recommended)

2 medium carrots, sliced

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, sliced

1/4 cup fresh cilantro or parsley, chopped (plus extra for garnish)

1 tablespoon lime juice (plus wedges for serving)

2 tablespoons olive oil

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, and ginger. Sauté until fragrant and the onion is soft, about 3 minutes.
