Description

Creamy Fish Chowder is a cozy, easy dinner packed with tender white fish, soft potatoes, smoky bacon, and a rich, velvety broth. It is one of my favorite comfort food ideas for chilly nights because it feels hearty and homemade without being complicated. This easy recipe is perfect for dinner ideas when I want something warm, satisfying, and full of classic seafood flavor.


Ingredients

8 ounces bacon, chopped

2 tablespoons butter

1 medium onion, diced

2 celery stalks, diced

3 garlic cloves, minced

1 1/2 pounds Yukon Gold potatoes, peeled and diced

4 cups fish stock or chicken broth

1 teaspoon fresh thyme

1 bay leaf

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups heavy cream

1 1/2 pounds cod or other firm white fish, cut into chunks

2 tablespoons fresh parsley, chopped


Instructions

1. Cook the chopped bacon in a large pot over medium heat until crisp, then remove it with a slotted spoon and set it aside.

2. Add the butter, diced onion, and celery to the pot and cook until softened, then stir in the garlic and cook for 30 seconds.

3. Add the diced potatoes, fish stock, thyme, bay leaf, salt, and black pepper, then bring to a gentle boil.

4. Reduce the heat and simmer until the potatoes are tender, about 12 to 15 minutes.

5. Pour in the heavy cream and stir until the broth is smooth and creamy.

6. Add the fish chunks and simmer gently for 5 to 7 minutes, or until the fish is opaque and flakes easily.

7. Remove the bay leaf, stir in most of the bacon and parsley, then ladle into bowls.

8. Top with the remaining bacon and parsley before serving.

Notes

Do not let the chowder boil after adding the fish, or the fish can break apart and turn tough instead of staying tender and flaky.
