Ingredients
2 pounds boneless skinless chicken breasts, cut into cubes
8 ounces cream cheese, cubed and softened
1 packet (1 ounce) ranch seasoning mix
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits
1/2 cup low-sodium chicken broth
1/4 cup fresh chopped parsley (plus more for garnish)
1/2 teaspoon black pepper
Instructions
1. Cut the chicken breasts into large bite-sized cubes.
2. Add chicken to the crock pot.
3. Top with cubed cream cheese, ranch seasoning, cheddar cheese, bacon bits, black pepper, and pour chicken broth around the edges.
4. Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is cooked through and tender.
5. Gently stir everything together until creamy. Optionally, shred the chicken for a saucier texture.
6. Stir in chopped parsley and serve hot over mashed potatoes, rice, noodles, or toasted bread.
7. Garnish with extra parsley before serving.
Notes
Let the cream cheese come to room temperature for easier melting.
You can substitute chicken thighs for extra juicy results.
Add a splash of extra chicken broth if you prefer a thinner sauce.
