Ingredients
2 large boneless skinless chicken breasts
1 pound potato gnocchi
1 cup panko bread crumbs
⅔ cup grated parmesan cheese (divided)
3 cloves garlic (minced)
1 cup heavy cream
½ cup chicken broth
3 tablespoons unsalted butter (divided)
2 tablespoons olive oil
1 cup mushrooms (sliced, optional)
1 large egg
½ cup all-purpose flour
2 tablespoons fresh parsley (chopped)
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
Instructions
1. Slice chicken breasts in half horizontally to create 4 thin cutlets. Pat dry and season with salt and pepper.
2. Prepare three bowls: one with flour, one with beaten egg, and one with panko bread crumbs mixed with ⅓ cup parmesan and garlic powder.
3. Dredge chicken in flour, then egg, then panko mixture, pressing crumbs on well.
4. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and cook 3–4 minutes per side until golden and cooked through. Transfer to a plate.
5. In the same skillet, melt 1 tablespoon butter. Add mushrooms (if using) and cook until browned, about 2–3 minutes. Stir in garlic and cook 1 minute more.
6. Lower heat to medium. Add heavy cream and chicken broth, scraping up any bits from the pan. Stir in remaining ⅓ cup parmesan. Simmer 3–4 minutes to thicken.
7. Meanwhile, cook gnocchi according to package instructions. Drain and add to skillet with sauce.
8. Slice crispy chicken and arrange on top of gnocchi in the skillet. Let everything simmer 1–2 minutes so flavors blend.
9. Top with parsley and extra parmesan before serving.
Notes
For extra-crispy chicken, use a cast-iron or heavy-bottomed skillet and don’t overcrowd the pan.
If you want a lighter sauce, swap half the cream for milk or use all half-and-half.
Gnocchi can be boiled or pan-fried before tossing in the sauce for a different texture.
