Ingredients
2 medium zucchini (about 12 oz total)
1/2 cup panko breadcrumbs
1/2 cup freshly grated Parmesan cheese
2 large eggs
2 tablespoons all-purpose flour
2 cloves garlic, finely minced
1/2 teaspoon dried Italian seasoning
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Olive oil spray or cooking spray
Instructions
1. Wash and dry the zucchini, then cut off the ends and slice into 1/4-inch thick rounds. Lay slices on paper towels and press gently to remove excess moisture.
2. Prepare three shallow bowls: one with flour, one with whisked eggs, and one with a mixture of panko, Parmesan, garlic, Italian seasoning, salt, and pepper.
3. Coat each zucchini slice in flour, dip in the eggs, then press into the breadcrumb-Parmesan mixture to coat both sides.
4. Preheat oven to 425°F (220°C), or air fryer to 400°F (200°C). Line a baking sheet with parchment and spray with olive oil. Arrange zucchini in a single layer and spray tops with more olive oil.
5. Bake for 18-22 minutes (or air fry 8-10 minutes), flipping halfway, until golden and crispy.
6. Let chips cool for 3-5 minutes, then serve hot with extra Parmesan or parsley if desired.
Notes
Drying zucchini slices well is key to maximum crispiness—don’t skip this step!
For best results, use freshly grated Parmesan rather than pre-shredded.
Serve immediately for optimal crunch; reheating in the oven or air fryer helps restore crispness if needed.
