Ingredients

1 1/2 pounds Brussels sprouts

3 tablespoons olive oil

1/2 cup freshly grated parmesan cheese

1/2 cup panko breadcrumbs

1 teaspoon garlic powder

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

Zest from 1/2 lemon (optional)


Instructions

1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

2. Trim the stems from the Brussels sprouts and slice each in half lengthwise. Remove any yellow or damaged outer leaves.

3. Place halved sprouts in a large mixing bowl. Add olive oil, garlic powder, salt, and pepper. Toss until evenly coated.

4. Add parmesan cheese and panko breadcrumbs. Gently toss again so each sprout is well coated.

5. Arrange Brussels sprouts cut side down in a single layer on the prepared baking sheet, leaving space between each for crispiness.

6. Roast in the oven for 22–25 minutes until deeply golden and crisp on the bottom, and tops are browned.

7. Remove from oven and, if desired, zest half a lemon over the hot sprouts.

8. Serve immediately with extra parmesan, if desired.

Notes

For maximum crispiness, do not overcrowd the baking sheet—give each sprout room!

Use freshly grated parmesan, not pre-shredded, for the best melt and flavor.
