Ingredients

2 ½ to 3 pounds bone-in, skin-on chicken thighs (about 6 pieces)

4 cups butternut squash, peeled and cubed (about 1 medium squash)

1 large yellow onion, sliced

⅓ cup pure maple syrup

3 tablespoons Dijon mustard

½ cup low-sodium chicken broth

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (plus extra sprigs for garnish)

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper


Instructions

1. Pat chicken thighs dry and season both sides with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken, skin-side down, until golden brown (about 3-4 minutes). Flip and cook 1 minute more. Remove from skillet.

3. Place cubed butternut squash and sliced onion in the bottom of your crockpot.

4. In a small bowl, whisk together maple syrup, Dijon mustard, chicken broth, minced garlic, and chopped thyme.

5. Lay seared chicken thighs on top of the vegetables. Pour maple-Dijon sauce evenly over the chicken and veggies. Add extra thyme sprigs if desired.

6. Cover and cook on low for 5–6 hours or high for 2.5–3 hours, until chicken is cooked through (internal temp 165°F) and squash is tender.

7. Serve chicken with squash and onions, spooning sauce over the top. Garnish with more fresh thyme if you like.

Notes

Searing the chicken first isn’t required but adds extra flavor and color to the final dish.

You can prep all ingredients the night before and store in your fridge, then cook in the morning.

Leftovers are delicious the next day! Store in the fridge up to 4 days or freeze for 2 months.
