Ingredients

1 pound ground beef 1 pound ground pork 1 cup breadcrumbs 1/2 cup milk 2 large eggs 1/2 cup grated parmesan cheese 1/4 cup chopped fresh parsley 1 small onion, finely diced 3 cloves garlic, minced 2 teaspoons Italian seasoning 1 teaspoon salt 1/2 teaspoon black pepper 4 cups marinara sauce

Instructions

1. In a large bowl, mix breadcrumbs and milk. Let sit 2-3 minutes until the milk is absorbed. Add ground beef, ground pork, eggs, parmesan, parsley, onion, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined. Shape mixture into 1- to 2-tablespoon-sized balls and place on a tray. (Optional) Brown meatballs in a skillet with a little oil for extra flavor, turning until golden all over. Transfer meatballs to the crockpot. Pour marinara sauce over the top and stir gently to coat. Cover and cook on low for 4-6 hours or high for 2-3 hours, until meatballs are tender and fully cooked. Serve hot, garnished with parsley or extra parmesan. Enjoy over pasta, in subs, or as an appetizer!

Notes

For even softer meatballs, avoid over-mixing the meat mixture. Browning the meatballs before slow cooking adds more flavor but is optional. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
