Ingredients
1 pound green beans, trimmed
8 ounces mushrooms, sliced
1 cup quinoa or couscous, uncooked
1/2 cup dried cranberries
1 tablespoon fresh rosemary, chopped (plus extra for garnish)
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prep the vegetables: Trim green beans and slice mushrooms. Rinse quinoa or couscous if needed.
2. Sauté the mushrooms: Heat 2 tablespoons olive oil in a large skillet over medium-high. Add mushrooms, cook until golden and liquid evaporates. Season with salt and pepper.
3. Cook the quinoa or couscous: Prepare according to package directions. Fluff with a fork and season lightly.
4. Blanch the green beans: Boil in salted water for 2-3 minutes until crisp-tender. Drain and set aside.
5. Assemble the dish: In a large serving bowl, combine cooked grain, sautéed mushrooms, green beans, cranberries, rosemary, and remaining olive oil. Toss gently. Taste and adjust seasoning. Garnish with extra rosemary.
Notes
To keep green beans crisp and bright, plunge into ice water after blanching.
For a gluten-free version, use quinoa instead of couscous.
You can prep all ingredients a day ahead; toss and warm just before serving.
