Ingredients
2 pounds boneless skinless chicken thighs
1/2 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons honey
2 tablespoons brown sugar
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon Chinese five spice powder
1 tablespoon sesame oil
1 tablespoon rice vinegar
1/2 teaspoon red food coloring, optional
2 green onions, sliced for garnish
1 teaspoon sesame seeds for garnish
Instructions
1. In a medium bowl, whisk together the hoisin sauce, soy sauce, honey, brown sugar, garlic, ginger, Chinese five spice, sesame oil, rice vinegar, and optional red food coloring until smooth.
2. Place the chicken thighs in a large zip-top bag or shallow dish and pour the marinade over them, making sure each piece is fully coated.
3. Cover and refrigerate for at least 4 hours, or overnight for the best flavor.
4. Preheat the oven to 400°F and line a baking sheet or roasting pan with parchment paper or foil.
5. Arrange the marinated chicken in a single layer on the prepared pan.
6. Roast for 25 to 30 minutes, turning the chicken once halfway through cooking.
7. Brush the chicken with extra marinade from the pan during the last few minutes to build a thicker glaze.
8. Broil for 2 to 4 minutes until the edges are caramelized and slightly charred, watching carefully so the glaze does not burn.
9. Let the chicken rest for 5 minutes before slicing.
10. Garnish with green onions and sesame seeds, then serve warm.
Notes
Do not skip the marinating time, because that is what gives the chicken its deep char siu flavor and helps keep it juicy instead of tasting flat.
