Ingredients

2 pounds boneless skinless chicken breasts

1 cup pineapple juice

1/2 cup low sodium soy sauce

1/2 cup packed brown sugar

3 cloves garlic minced

1 tablespoon fresh ginger grated

1 can (20 ounces) pineapple chunks drained

2 tablespoons cornstarch

2 tablespoons water

2 tablespoons chopped green onions

1 tablespoon sesame seeds


Instructions

1. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger until fully combined.

2. Place the 2 pounds of chicken breasts in the bottom of the crockpot in a single layer.

3. Pour the prepared sauce evenly over the chicken.

4. Add the drained pineapple chunks on top.

5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and fully cooked.

6. Remove the chicken temporarily and set aside.

7. In a small bowl, stir together 2 tablespoons cornstarch and 2 tablespoons water to form a smooth slurry.

8. Stir the slurry into the sauce in the crockpot and cook on high for 15 to 20 minutes until thickened.

9. Return the chicken to the crockpot and spoon the thickened sauce over the top.

10. Garnish with chopped green onions and sesame seeds before serving.

Notes

Do not skip draining the pineapple chunks, as excess liquid can thin the sauce and prevent it from thickening properly.
