Ingredients
12 large eggs
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1/4 cup finely chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
24 small red pepper pieces or pomegranate arils
24 small pretzel stars
Instructions
1. Place 12 large eggs in a saucepan and cover with water. Bring to a boil, turn off the heat, cover, and let sit for 10 to 12 minutes. Transfer to an ice bath and cool completely.
2. Peel the eggs and slice each egg in half lengthwise to create 24 halves. Remove all yolks and place them in a mixing bowl. Arrange egg whites on a serving tray.
3. Mash the 12 yolks with 1/2 cup mayonnaise, 2 teaspoons Dijon mustard, 1 tablespoon fresh lemon juice, 1/4 cup finely chopped parsley, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until completely smooth.
4. Transfer the filling to a piping bag fitted with a large star tip. Pipe the mixture onto each of the 24 egg whites in a tall swirl to resemble Christmas trees.
5. Lightly dust all eggs with 1/4 teaspoon paprika. Decorate each tree with 1 red pepper piece or pomegranate aril and finish with 1 pretzel star on top. Chill until ready to serve.
Notes
For best presentation, add the pretzel stars shortly before serving so they stay crisp and do not soften from moisture.
