Ingredients
1 cup unsalted butter
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
12 oz white chocolate wafers
1/2 cup granulated sugar
2 tablespoons ground cinnamon
Instructions
1. Line a baking sheet with parchment paper.
2. In a saucepan over medium heat, combine 1 cup butter and 1 cup sugar. Stir until smooth and golden brown, about 10 minutes.
3. Once it reaches a peanut butter color or 285°F, remove from heat and stir in vanilla extract and salt.
4. Pour toffee onto the baking sheet and spread to about 1/4 inch thick. Let cool completely.
5. In a small bowl, mix 1/2 cup sugar with 2 tablespoons cinnamon.
6. Melt white chocolate wafers in the microwave in 30-second intervals, stirring in between until smooth.
7. Break cooled toffee into pieces. Dip each in melted white chocolate and sprinkle generously with cinnamon sugar on both sides.
8. Let harden fully on parchment before serving or storing.
Notes
Don’t overcook the toffee—watch for that perfect golden peanut butter shade.
Use good-quality white chocolate for smooth coating and authentic flavor.
Let the toffee cool completely before dipping to ensure it holds its shape.
