Description

This Doritos Taco Casserole is the kind of easy dinner I make when I need something cheesy, hearty, and full of bold taco flavor without a lot of extra work. With layers of seasoned ground beef, creamy sauce, sweet corn, melty cheese, and crunchy Doritos, it is a family-friendly casserole that works perfectly for busy weeknights, easy dinner plans, comfort food cravings, and simple food ideas everyone gets excited about.


Ingredients

1 pound ground beef

1 small yellow onion, chopped

1 packet taco seasoning

1/3 cup water

1 cup salsa

1 can Rotel, drained

1 can corn, drained

1 can cream of chicken soup

1 cup sour cream

2 cups shredded cheddar cheese

1 1/2 cups shredded mozzarella cheese

9 ounces Nacho Cheese Doritos, lightly crushed

2 tablespoons chopped cilantro or 2 sliced green onions


Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain excess grease.

3. Stir in the taco seasoning and water, and simmer for 1 to 2 minutes.

4. Add the salsa, Rotel, corn, cream of chicken soup, and sour cream. Stir until the mixture is fully combined and warmed through.

5. Spread half of the lightly crushed Doritos into the prepared baking dish.

6. Spoon half of the beef mixture over the Doritos.

7. Sprinkle 1 cup cheddar cheese and 3/4 cup mozzarella cheese over the filling.

8. Add the remaining Doritos, then spread the rest of the beef mixture on top.

9. Finish with the remaining cheddar and mozzarella cheese.

10. Bake for 20 to 25 minutes, until the cheese is melted and bubbly.

11. Let the casserole rest for 5 to 10 minutes before serving.

12. Garnish with cilantro or green onions if desired.

Notes

Do not crush the Doritos too finely, or the casserole can turn overly soft instead of keeping that delicious mix of cheesy layers and crunchy texture.
