Ingredients
1 1/2 cups all-purpose flour

1/2 cup vegetable oil
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups finely grated zucchini (about 1 medium zucchini, squeezed dry)
1 cup semi-sweet chocolate chips (plus more for topping)
Instructions
1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
3. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
4. In another bowl, whisk oil, brown sugar, granulated sugar, eggs, and vanilla until smooth.
5. Stir grated zucchini into the wet mixture.
6. Add dry ingredients to wet, mixing gently until just combined.
7. Fold in chocolate chips.
8. Divide batter evenly among muffin cups, filling each about 3/4 full. Top with extra chocolate chips.
9. Bake for 18–22 minutes, or until a toothpick comes out with just a few moist crumbs.
10. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
11. Enjoy warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze up to 3 months.
Notes
