These Easter Cake Mix Cookie Bars are a quick breakfast treat, easy dessert, and fun food idea for spring parties, Easter brunch, and everyday baking. Ingredients
1 box yellow cake mix
2 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 cup Easter candy-coated chocolates
1/2 cup white chocolate chips
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or grease it lightly.
2. In a large bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth.
3. Add the yellow cake mix and stir until a thick dough forms.
4. Fold in the semi-sweet chocolate chips, white chocolate chips, and most of the Easter candy-coated chocolates.
5. Press the dough evenly into the prepared pan.
6. Scatter the remaining candy-coated chocolates over the top and gently press them in.
7. Bake for 22 to 26 minutes, until the edges are lightly golden and the center is just set.
8. Cool completely before slicing into bars.
Notes
Do not overbake these bars, because pulling them out when the center is just set is what keeps them soft and chewy instead of dry.
