Ingredients

4 large poblano peppers

1 tablespoon olive oil

1 ½ cups cooked rice

1 cup black beans, drained and rinsed

1 cup diced tomatoes, drained if canned

1 cup shredded cheddar cheese, divided

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon salt

¼ cup sour cream

2 tablespoons chopped fresh cilantro


Instructions

1. Preheat oven to 425°F (220°C). Place poblano peppers on a baking sheet, drizzle with olive oil, and roast for 20 minutes, turning once until blistered and tender.

2. Let peppers cool slightly. Cut a slit down one side of each and gently remove seeds.

3. In a large bowl, combine cooked rice, black beans, diced tomatoes, ½ cup shredded cheddar cheese, cumin, chili powder, garlic powder, and salt. Mix well.

4. Stuff each pepper generously with the rice mixture and place in a lightly oiled baking dish.

5. Top peppers with the remaining ½ cup cheddar cheese.

6. Bake at 425°F (220°C) for 15–18 minutes, until cheese is melted and golden.

7. Remove from oven and let cool for 5 minutes. Top each with a dollop of sour cream and sprinkle with fresh cilantro.

8. Serve hot and enjoy!

Notes

Use Monterey Jack or pepper jack cheese for a fun twist.
