Ingredients

2 pounds Yukon Gold or Russet potatoes

6 tablespoons unsalted butter, divided

3/4 cup whole milk, warmed

2 large yellow onions, thinly sliced

1 1/2 teaspoons salt, divided

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Melt 3 tablespoons butter in a large skillet over medium-low heat. Add onions and 1/2 teaspoon salt. Cook, stirring occasionally, until onions are deeply golden and soft, about 25–30 minutes. If they begin sticking, add a splash of water.

2. Meanwhile, peel and cut potatoes into chunks. Place in a large pot, cover with cold water, and add 1 teaspoon salt. Bring to a boil, reduce to simmer, and cook until fork-tender, about 15–18 minutes.

3. Drain potatoes and return to pot. Add remaining 3 tablespoons butter and warmed milk. Mash until very smooth and creamy. Season with black pepper and more salt if needed.

4. Transfer mashed potatoes to a serving bowl. Top with caramelized onions and any pan juices. Garnish with parsley, if using. Serve hot.

Notes

For extra creamy potatoes, use a potato ricer or food mill.

Caramelized onions can be made up to 3 days ahead and reheated before serving.

Make it dairy-free by using vegan butter and plant-based milk.
