Ingredients

4 cups apples (peeled, cored, and finely diced)

1 cup brown sugar

1 cup granulated sugar

1/4 cup water

2 tablespoons lemon juice

3 tablespoons salted butter

1 teaspoon cinnamon

2 teaspoons vanilla extract


Instructions

1. Peel, core, and finely dice the apples to make 4 cups.

2. In a large heavy-bottomed pot, combine brown sugar, granulated sugar, and water over medium heat. Stir occasionally, letting the mixture melt and bubble until it turns golden and fragrant (about 5-7 minutes).

3. Carefully stir in the diced apples and lemon juice. Continue cooking, stirring often, until the apples release juices and the mixture thickens (about 15 minutes).

4. Lower the heat and stir in butter, cinnamon, and vanilla extract. Simmer for 5 more minutes, stirring frequently, until the jam is glossy and the apples are tender but still distinct.

5. Remove from heat. Carefully spoon the hot jam into clean jars, leaving about 1/4 inch at the top. Let cool, then seal and refrigerate.

Notes

For a chunkier texture, dice apples slightly larger and cook just until tender.
