Description

This Easy Feta and Spinach Casserole is a quick breakfast or dinner idea that combines creamy feta cheese, nutrient-rich spinach, and a trio of cheeses for a comforting and healthy snack or meal. Ingredients

6 large eggs

1 cup whole milk

1 and 1/2 cups crumbled feta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

5 cups chopped fresh spinach or 10 oz frozen chopped spinach

1 small yellow onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1/4 cup all-purpose flour


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Heat olive oil in a skillet and sauté onion for 4-5 minutes until translucent. Add garlic and cook for 1 more minute. Remove from heat.

3. In a large mixing bowl, whisk eggs, milk, salt, pepper, oregano, and flour until smooth.

4. Fold in sautéed onion and garlic, spinach, feta, mozzarella, and Parmesan cheese. Mix until combined.

5. Pour the mixture into the prepared baking dish and smooth the top.

6. Bake for 40–45 minutes or until golden and a toothpick comes out clean.

7. Let rest for 10 minutes before slicing. Serve warm and garnish with parsley if desired.

Notes

If using frozen spinach, thaw and squeeze out all excess moisture before mixing.

For extra crisp top, broil the casserole for 1–2 minutes at the end.

You can substitute gluten-free flour to make this recipe gluten-free.
