Ingredients
2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup unsalted butter, cold and cut into cubes
6 to 8 tablespoons ice water
Instructions
1. Whisk the flour and salt together in a large mixing bowl.
2. Cut the cold butter into the flour until the mixture looks crumbly with pea-sized butter pieces throughout.
3. Add the ice water 1 tablespoon at a time, mixing gently until the dough just starts to come together.
4. Turn the dough onto a clean surface and gently press it together without overworking it.
5. Divide the dough into 2 equal disks, wrap tightly, and chill for at least 1 hour.
6. Roll out one disk on a lightly floured surface into a 12-inch circle.
7. Transfer the dough to a 9-inch pie plate, trim or crimp the edges, then fill and bake as needed.
8. Use the second disk for a top crust or freeze it for another pie.
