Ingredients
24 oz frozen meatballs
2 medium carrots, sliced
2 ribs celery, sliced
8 oz mushrooms, sliced
1 medium onion, chopped
2 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 tablespoon olive oil
1 tablespoon cornstarch
2 tablespoons cold water
1 tablespoon fresh rosemary, chopped (plus extra for garnish)
salt and pepper, to taste
mashed potatoes, for serving
Instructions
1. Slice the carrots, celery, mushrooms, and chop the onion.
2. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the onion and sauté until softened, about 3 minutes.
3. Add carrots, celery, and mushrooms. Cook another 4-5 minutes, stirring occasionally, until the vegetables start to soften.
4. Add the frozen meatballs to the pot. Pour in the beef broth, Worcestershire sauce, and tomato paste. Stir gently to combine everything.
5. Bring to a simmer. Cover and cook on low for 18-20 minutes, stirring occasionally, until the meatballs are heated through and vegetables are tender.
6. In a small bowl, whisk together cornstarch and cold water until smooth. Stir this mixture into the simmering pot. Cook uncovered for 3-4 minutes, until the gravy thickens.
7. Stir in fresh rosemary and season to taste with salt and pepper.
8. Serve the meatballs and vegetables with plenty of gravy over a bed of mashed potatoes. Garnish with extra rosemary if desired.
Notes
For the thickest, richest gravy, let the sauce simmer uncovered a few extra minutes after adding the cornstarch slurry.
If you love extra vegetables, toss in diced potatoes or green beans with the other veggies.
