Ingredients

2 cans (15 oz each) chickpeas, drained and rinsed (or 3 cups cooked chickpeas)

1/4 cup olive oil

1 large yellow onion, diced

2 medium carrots, sliced

2 stalks celery, sliced

3 cloves garlic, minced

5 cups vegetable broth

1 bay leaf

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

3 tablespoons lemon juice (from 1 lemon)

1 1/2 teaspoons salt (or to taste)

1/2 teaspoon black pepper (or to taste)

1/2 teaspoon paprika (optional, for garnish)


Instructions

1. Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Sauté for 6–8 minutes, until the onion is soft.

2. Stir in minced garlic and cook for 1 minute, until fragrant. Add bay leaf, salt, and pepper, stirring well.

3. Add chickpeas and pour in the vegetable broth. Bring to a boil, then lower heat and simmer uncovered for 25–30 minutes, until vegetables are tender.

4. For creaminess, use an immersion blender to blend a small portion of the soup, or transfer 2 cups to a blender, blend, and return to the pot.

5. Turn off the heat. Stir in dill, parsley, and lemon juice. Taste and adjust seasoning if needed.
