Ingredients
2 pounds beef chuck roast, cut into chunks
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
1 yellow onion, chopped
3 cloves garlic, minced
2 stalks celery, sliced
3 carrots, cut into chunks
1 1/2 pounds potatoes, peeled and cut into chunks
2 tablespoons tomato paste
4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon fresh thyme leaves
1 bay leaf
1 cup frozen peas
Instructions
1. Pat the beef dry, season it with salt and pepper, and toss it with the flour.
2. Heat the olive oil in a large Dutch oven over medium-high heat and brown the beef in batches.
3. Remove the beef and add the onion and celery to the pot, cooking until softened.
4. Stir in the garlic and tomato paste and cook for 1 minute.
5. Pour in a little beef broth and scrape up the browned bits from the bottom of the pot.
6. Add the remaining broth, Worcestershire sauce, thyme, and bay leaf, then return the beef to the pot.
7. Cover and simmer on low for 1 hour.
8. Add the carrots and potatoes and continue simmering for 45 to 60 minutes, until the beef is tender and the vegetables are cooked through.
9. Stir in the peas during the last 5 minutes of cooking.
10. Remove the bay leaf, taste, adjust seasoning if needed, and serve hot.

Do not rush the browning step, because a deep sear on the beef adds the rich flavor that makes this stew taste truly homemade.
