These Easy Pancake Sausage Balls are the kind of quick breakfast that makes busy mornings feel a little more manageable. They are savory, cheesy, soft in the middle, and packed with cozy breakfast flavor, making them one of my favorite breakfast ideas when I need an easy recipe that also works for brunch, meal prep, and simple food ideas for a crowd.
Ingredients
1 lb breakfast sausage
2 cups pancake mix
2 cups shredded cheddar cheese
1/4 cup milk
2 tbsp maple syrup
1/2 tsp garlic powder
1/4 tsp black pepper
Instructions
1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
2. Add the breakfast sausage, pancake mix, shredded cheddar cheese, garlic powder, and black pepper to a large mixing bowl.
3. Pour in the milk and maple syrup, then mix everything until a thick dough forms.
4. Scoop and roll the mixture into evenly sized balls, about 1 1/2 inches each.
5. Place the sausage balls on the prepared baking sheet with a little space between them.
6. Bake for 20 to 24 minutes, or until cooked through and lightly golden on the outside.
7. Let them rest for 5 minutes before serving warm.
Notes
Do not overmix or pack the dough too tightly, or the sausage balls can turn out dense instead of tender.
