Ingredients

3 cups cooked chilled white rice

2 large eggs

2 tablespoons vegetable oil

1 cup frozen mixed vegetables (peas, carrots, corn)

3 stalks green onions, sliced (reserve some for garnish)

2 tablespoons soy sauce

1 teaspoon sesame oil

1/4 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)


Instructions

1. Gather all ingredients, chop green onions, and make sure your rice is cold and separated.

2. Heat 1 tablespoon vegetable oil in a large nonstick skillet or wok over medium-high heat.

3. Beat the eggs and pour them into the skillet, scrambling gently until just set. Transfer the scrambled eggs to a plate and set aside.

4. Add the remaining 1 tablespoon oil to the skillet. Add the frozen mixed vegetables and sauté for 2-3 minutes until tender.

5. Increase the heat to high. Add the cold rice, breaking up clumps, and stir-fry for 2-3 minutes until heated through and lightly golden in spots.

6. Return the eggs to the pan. Add the soy sauce, salt, and pepper. Toss to combine, then drizzle with sesame oil and add most of the green onions (reserving some for garnish). Stir well.

7. Serve hot, garnished with the reserved green onions.

Notes

Use leftover, chilled rice for best texture—freshly cooked rice will turn mushy.

Customize with your favorite protein or extra veggies for a heartier meal.
