Ingredients
1 cup vanilla wafer crumbs
1/4 cup unsalted butter, melted (for base)
1/2 cup unsalted butter
2/3 cup eggnog
2 cups granulated sugar
2 cups white chocolate chips
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon rum extract
1/2 teaspoon freshly grated nutmeg, plus more for sprinkling

Instructions
1. Line an 8-inch square baking pan with parchment paper, leaving overhang on the sides. Lightly grease the paper.
2. In a bowl, mix 1 cup vanilla wafer crumbs and 1/4 cup melted butter. Press firmly and evenly into the bottom of the pan to form the base.
3. In a medium saucepan over medium heat, combine 1/2 cup butter, 2/3 cup eggnog, and 2 cups sugar. Stir often until the sugar dissolves and the mixture bubbles gently (about 4-5 minutes).
4. Remove from heat. Add 2 cups white chocolate chips, 1/4 teaspoon salt, 1 teaspoon vanilla, 1 teaspoon rum extract, and 1/2 teaspoon nutmeg. Stir until the chocolate is melted and smooth.
5. Pour the fudge over the base. Smooth the top. Sprinkle extra nutmeg and sprinkles on top if desired.
6. Let cool to room temperature, then refrigerate for at least 3 hours until fully set.
7. Lift out of the pan using parchment. Slice into 25 squares, wiping the knife between cuts for neat edges.
