Frozen Taquito Enchiladas are my favorite 30-minute hack for busy nights: crispy frozen taquitos baked in rich enchilada sauce and loads of melted cheese for a cozy, family-friendly meal. This easy dinner recipe is perfect when you need quick dinner ideas and simple food ideas that practically make themselves, and it’s a fun way to mix up your weekly meal plan alongside other quick breakfast and healthy snack favorites.
Ingredients
12 frozen taquitos (beef, chicken, or bean)
2 cups red enchilada sauce
1/4 cup water or chicken broth
2 cups shredded Mexican blend cheese
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded lettuce (for serving)
1/2 cup diced cherry tomatoes (for serving)
1/4 cup sour cream (for serving)
1 jalapeño, thinly sliced (for serving)
1 lime, cut into wedges (for serving)
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
2. In a bowl, whisk together enchilada sauce, water or broth, garlic powder, cumin, chili powder, salt, and black pepper.
3. Arrange frozen taquitos in the prepared baking dish in tight rows, seam-side down.
4. Pour about two-thirds of the sauce evenly over the taquitos, coating each one and letting the sauce run between them.
5. Cover the dish tightly with foil and bake for 20–25 minutes, until the taquitos are heated through and the sauce is bubbling around the edges.
6. Remove foil, pour remaining sauce over the top if the taquitos look dry, and sprinkle shredded cheese evenly over everything.
7. Return the dish to the oven, uncovered, and bake for 5–10 minutes, until the cheese is melted and lightly golden.
8. Let the enchiladas rest for 5 minutes, then top with shredded lettuce, diced tomatoes, sour cream, and sliced jalapeño.
9. Serve warm with lime wedges for squeezing over each portion.
Notes
For the best texture, don’t skip covering the pan with foil for the first bake—this traps steam so the taquitos heat through and stay tender instead of drying out under the sauce and cheese.
