Description
Fudgy Crunchy No-Bake Magic is the kind of easy recipe I love keeping around for busy days when I want a quick dessert, healthy snack style treat, or simple food idea without turning on the oven. These chewy chocolate oat cookies come together fast with pantry staples, making them perfect for dessert boards, sweet snack breaks, easy recipe collections, and no-bake food ideas everyone gets excited about.
Ingredients
1/2 cup butter
2 cups granulated sugar
1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick oats
1/8 teaspoon salt
Instructions
1. Line a baking sheet or countertop space with parchment paper or wax paper before starting.
2. Add the butter, sugar, milk, cocoa powder, and salt to a medium saucepan over medium heat.
3. Stir until the butter melts and the mixture becomes smooth.
4. Bring the mixture to a full rolling boil and let it boil for 1 minute.
5. Remove the pan from the heat and immediately stir in the peanut butter and vanilla extract until smooth.
6. Add the quick oats and mix until fully coated in the fudgy mixture.
7. Drop spoonfuls of the mixture onto the prepared paper.
8. Let the cookies sit at room temperature until set, or chill them for faster firming.
9. Serve once fully set and store leftovers in an airtight container.
Notes
Do not skip the full rolling boil, because undercooking the sugar mixture is the most common reason no-bake cookies stay too soft and never set properly.
