Ingredients

1 2/3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, softened

3/4 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2/3 cup buttermilk

1/2 cup rainbow sprinkles (jimmies), plus more for decorating

1/2 cup (1 stick) unsalted butter, softened

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

23 tablespoons heavy cream or milk

Pinch of salt


Instructions

1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy.

4. Beat in the egg and vanilla extract until combined.

5. Alternate adding the flour mixture and buttermilk to the wet ingredients, beginning and ending with the flour mixture. Mix just until combined.

6. Gently fold in the rainbow sprinkles.

7. Scoop tablespoonfuls of batter onto the prepared baking sheets, spacing 2 inches apart. Top with extra sprinkles if desired.

8. Bake for 10–12 minutes, or until cookies spring back when lightly touched. Let cool completely.

9. For the filling: Beat butter until creamy. Gradually mix in powdered sugar, vanilla, salt, and enough heavy cream or milk to reach a fluffy consistency.

10. Spread or pipe filling onto the flat side of half the cookies. Top with remaining cookies to make sandwiches.

11. Roll the sides in extra sprinkles, if you like. Enjoy!

Notes

Use jimmies sprinkles for the best color—avoid nonpareils, which can bleed.

Be gentle folding in the sprinkles to keep your batter looking vibrant.
