Ingredients

900g (2 lbs) sweet potatoes, peeled and thinly sliced

480ml (2 cups) heavy cream

3 cloves garlic, minced

120g (1 cup) Gruyère cheese, shredded

2 tbsp fresh thyme leaves (plus extra for garnish)

1 tsp salt

1/2 tsp black pepper

2 tbsp unsalted butter, cut into small pieces


Instructions

1. Preheat your oven to 375°F (190°C). Butter a medium baking dish.

2. In a small saucepan, combine the heavy cream and minced garlic. Warm gently over medium-low heat until just starting to simmer. Remove from heat.

3. Arrange half of the sweet potato slices in overlapping layers in the prepared dish. Season with half the salt, pepper, and thyme.

4. Pour over half the garlic-infused cream and sprinkle with half the Gruyère cheese.

5. Layer the remaining sweet potatoes, season with remaining salt, pepper, and thyme. Pour on the rest of the cream and sprinkle with remaining cheese. Dot the top with butter.

6. Cover tightly with foil and bake for 35 minutes.

7. Remove foil and bake an additional 20–25 minutes, until the potatoes are tender and the top is golden and bubbling.

8. Let cool for at least 10 minutes before serving. Garnish with extra thyme if desired.

Notes

For best texture, use a mandoline slicer for even sweet potato slices.

Substitute Gruyère with cheddar or parmesan if desired.

The dish can be assembled up to 24 hours ahead and baked when ready.
