Ingredients

4 large sweet potatoes

2 cups heavy cream

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon fresh thyme leaves (plus more for garnish)

1 1/2 cups Gruyère cheese, shredded (or sharp cheddar)

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. Peel sweet potatoes and slice them into thin, even rounds (about 1/8-inch thick).

3. In a small saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

4. Add heavy cream and thyme to the pan. Simmer gently for 2-3 minutes, stirring, then remove from heat.

5. Arrange half of the sweet potato slices in overlapping layers in the prepared dish.

6. Pour half of the garlic cream mixture evenly over the potatoes, then sprinkle with half the cheese, salt, and pepper.

7. Repeat with remaining sweet potatoes, sauce, cheese, salt, and pepper.

8. Cover dish tightly with foil and bake for 35 minutes.

9. Remove foil and bake an additional 20–25 minutes, until the top is golden and bubbly, and potatoes are tender.

10. Let cool for 10 minutes, garnish with extra thyme, and serve warm.

Notes

For a lighter version, use half-and-half instead of heavy cream, or swap some of the cream for milk.

Experiment with different cheeses, such as sharp cheddar or fontina, for a new flavor twist.

For extra flavor, add a pinch of cayenne or smoked paprika to the cream sauce.
