Ingredients

2 pounds russet potatoes

1 small yellow onion

2 large eggs

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup vegetable oil (for frying)

2 tablespoons chopped chives (for garnish)

sour cream or applesauce (for serving)

Instructions

1. Peel the potatoes and grate them using a box grater or food processor.

2. Place the grated potatoes in a clean towel and squeeze out as much moisture as possible.

3. Grate the onion and add it to the potatoes.

4. In a large mixing bowl, combine the potatoes, onion, eggs, flour, salt, and black pepper. Mix until well combined.

5. Heat the vegetable oil in a large skillet over medium-high heat.

6. Drop heaping spoonfuls of the potato mixture into the hot oil, flattening them gently with a spatula.

7. Fry for 2-3 minutes on each side, or until golden brown and crispy.

8. Transfer the pancakes to a paper towel-lined plate to drain excess oil.

9. Serve immediately, garnished with chopped chives, and enjoy with sour cream or applesauce.

Notes

Squeeze the potatoes very well—removing excess moisture is the secret to extra crispy pancakes.

Use Russet or Yukon Gold potatoes for best results; they have just the right amount of starch.

To keep pancakes crispy, place them in a single layer on a baking sheet in a warm oven until ready to serve.
