Ingredients
2 cups almond flour
1/4 cup melted butter
2 tablespoons maple syrup
1 pinch salt
3 medium apples
1 cup heavy cream
1/2 cup brown sugar
2 tablespoons butter
1 tablespoon cornstarch
1 tablespoon water (for cornstarch slurry)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
2 tablespoons apricot jam
1 tablespoon water (for glaze)
whipped cream (optional)
candied pecans (optional)
Instructions
1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, melted butter, maple syrup, and salt. Stir into a crumbly dough.
2. Press the dough into a 9-inch tart pan evenly. Bake for 10–12 minutes or until lightly golden. Cool completely.
3. In a saucepan, combine brown sugar, butter, and heavy cream over medium heat. Stir until sugar dissolves and the mixture thickens slightly.
4. In a separate bowl, mix cornstarch with 1 tablespoon water. Whisk it into the caramel sauce and cook 1–2 more minutes.
5. Remove the pan from heat, and stir in vanilla and cinnamon. Let cool slightly.
6. Pour the caramel filling into the cooled crust. Chill in the refrigerator for 1 hour.
7. Thinly slice the apples and arrange them neatly over the caramel layer.
8. In a small pan, warm apricot jam with 1 tablespoon water. Brush the glaze over the apples for shine.
9. Chill the tart for 30 more minutes before serving.
10. Garnish with whipped cream and candied pecans if desired. Slice and enjoy!
Notes
Use firm apples like Honeycrisp or Granny Smith for best texture.
Let the crust cool completely before adding the caramel filling to avoid sogginess.
Store leftovers in the fridge, covered, for up to 4 days.
