8 ounces cremini or white mushrooms, sliced

2 teaspoons Dijon mustard
1 teaspoon smoked paprika
1 cup beef stock
3/4 cup sour cream
2 tablespoons butter
1 tablespoon olive oil
2 tablespoons fresh parsley or chives, chopped
8 ounces egg noodles or 3 cups cooked rice (for serving)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Pat the beef dry, season with salt and black pepper, and set aside.
2. Heat a large skillet over high heat. Add 1 tablespoon butter and olive oil, then sear the beef in batches until browned on all sides. Remove beef and set aside.
3. Lower the heat to medium. Add the remaining 1 tablespoon butter to the pan, then add diced onions. Sauté until soft and translucent, about 3 minutes.
4. Stir in the sliced mushrooms and cook until browned and their liquid has evaporated, about 5 minutes.
5. Add minced garlic, Dijon mustard, and smoked paprika to the pan, stirring until fragrant (about 1 minute).
