Description
This Greek Bean Salad with Lemon Marinated Beans is one of my favorite easy recipes for a quick lunch, healthy snack, light dinner, and fresh side dish all in one. It is packed with creamy white beans, crisp cucumber, juicy tomatoes, red onion, olives, feta, and a bright lemon dressing, making it perfect for easy dinner ideas, simple food ideas, meal prep, and flavorful Mediterranean-inspired meals.
Ingredients
2 cans white beans, drained and rinsed
1/4 cup fresh lemon juice
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups cucumber, diced
1 cup cherry tomatoes, halved
1/2 small red onion, thinly sliced
1/2 cup Kalamata olives
1/2 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
Instructions
1. Add the white beans, lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper to a large bowl. Stir gently and let the beans marinate for 15 to 20 minutes.
2. Dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the parsley while the beans sit.
3. Add the cucumber, cherry tomatoes, red onion, olives, and parsley to the marinated beans. Toss gently until everything is well coated.
4. Fold in the crumbled feta carefully so it keeps its texture.
5. Serve right away or chill for 20 to 30 minutes before serving for even better flavor.
Notes
Do not skip the marinating time for the beans, because that is what gives the salad its best flavor and keeps it from tasting bland.
