Ingredients

2 medium boneless, skinless chicken breasts

2 tablespoons olive oil (for marinade)

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

6 cups mixed lettuce (romaine or green leaf), washed and chopped

1 cup cherry tomatoes, halved

1 cup cucumber, thinly sliced

1/2 small red onion, thinly sliced

1/2 cup Kalamata olives, pitted

1/2 cup feta cheese, crumbled

1 lemon, cut into wedges

1 cup Greek yogurt (for tzatziki)

1/2 cup cucumber, grated (for tzatziki)

1 clove garlic, minced (for tzatziki)

1 tablespoon fresh dill, chopped (plus extra for garnish)

1 tablespoon lemon juice (for tzatziki)

1 tablespoon olive oil (for tzatziki)

1/4 teaspoon salt (for tzatziki)


Instructions

1. Marinate the chicken by combining olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Coat chicken breasts in marinade, cover, and refrigerate for at least 30 minutes.

2. Preheat grill or grill pan to medium-high heat. Grill marinated chicken for 6-7 minutes per side, or until cooked through and golden. Remove from grill, let rest, then slice into strips.

3. Make the tzatziki by mixing Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, fresh dill, lemon juice, olive oil, and salt in a bowl. Stir well until creamy and set aside.

4. Arrange chopped lettuce in a large salad bowl. Top with sliced cucumbers, cherry tomatoes, red onion, olives, and crumbled feta.

5. Add grilled chicken strips on top of the salad.

6. Spoon generous tzatziki sauce over the center of the salad.

7. Garnish with fresh dill and lemon wedges.
