Ingredients

1 cup cottage cheese

1 medium cucumber, diced

2 medium tomatoes, chopped

1 bell pepper, diced (any color)

1/3 cup Kalamata olives, pitted and halved

1/4 small red onion, thinly sliced

2 tablespoons fresh parsley, chopped

1/2 teaspoon dried oregano

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

Salt, to taste

Black pepper, to taste


Instructions

1. Wash and dry all vegetables. Dice cucumber, chop tomatoes and bell pepper, and thinly slice red onion. Halve or slice olives if needed.

2. In a large salad bowl, add cottage cheese. Drizzle with half the olive oil and all of the lemon juice. Sprinkle with a pinch of salt and pepper. Gently stir.

3. Add cucumber, tomatoes, bell pepper, red onion, and Kalamata olives to the bowl.

4. Scatter chopped parsley and dried oregano over the salad.

5. Drizzle remaining olive oil. Gently toss everything until well combined. Taste and adjust salt, pepper, or lemon juice as desired.

6. Serve immediately for crisp texture, or chill for up to 1 hour for flavors to meld.

Notes

For best results, use full-fat or 2% small curd cottage cheese.

Add extra veggies like radishes or spinach for even more color and crunch.

Store leftovers in an airtight container in the fridge for up to 2 days.
