Ingredients
3 medium ripe bananas, mashed
1 cup rolled oats
1 cup whole wheat flour
1/2 cup Greek yogurt
2 large eggs
1/3 cup honey or maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chocolate chips (plus extra for topping)
Instructions
1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a large bowl, mash the bananas well. Add Greek yogurt, eggs, honey (or maple syrup), and vanilla extract. Mix until fully combined.
3. In a separate bowl, whisk together rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
4. Add the dry ingredients to the wet mixture. Stir gently until just combined—do not overmix.
5. Fold in 1/2 cup chocolate chips, saving a few for topping.
6. Divide batter evenly among muffin cups. Sprinkle with remaining chocolate chips.
7. Bake for 18–22 minutes, until the muffins are golden brown and a toothpick inserted comes out clean.
8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
9. Enjoy fresh, or store in an airtight container for up to 3 days, or freeze for up to 3 months.
Notes
For the best flavor, use very ripe bananas with brown spots.
You can substitute mini chocolate chips or dairy-free chocolate chips if preferred.
To make these gluten-free, use gluten-free oats and a 1:1 gluten-free flour blend.
