Ingredients
6 large eggs
1 cup 2% milk
1/2 cup plain Greek yogurt
2 cups small broccoli florets (fresh or thawed frozen, patted dry)
1/2 cup finely chopped onion or green onions
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella or Swiss cheese
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried Italian herbs or dried thyme
2 tablespoons chopped fresh parsley or chives (for garnish)
Instructions
1. Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish or similar baking dish with olive oil or nonstick spray.
2. Warm the olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.
3. Add the broccoli florets to the skillet with a pinch of salt. Cook for another 3–4 minutes, just until the broccoli brightens in color and starts to become tender. Remove from heat and let cool slightly.
4. In a large mixing bowl, whisk the eggs until the yolks and whites are fully combined.
5. Add the milk, Greek yogurt, remaining salt, black pepper, and dried Italian herbs or thyme to the eggs. Whisk until the mixture is smooth and slightly frothy.
6. Spread the cooked broccoli and onions evenly over the bottom of the prepared baking dish.
7. Sprinkle the shredded cheddar and mozzarella or Swiss cheese evenly over the vegetables.
8. Slowly pour the egg mixture over the vegetables and cheese, making sure it spreads evenly. Gently tap the dish on the counter a few times to release any large air bubbles.
9. Place the dish on the middle rack of the oven and bake for 30–35 minutes, or until the quiche is set in the center and the top is lightly golden and puffed.
10. Remove from the oven and let the quiche rest for 10–15 minutes to finish setting.
11. Garnish with chopped fresh parsley or chives, slice into 6 wedges, and serve warm.
