These Healthy High Protein Cocoa Chickpea Cookies with Banana are a soft, chocolatey, easy recipe that turns simple pantry staples into a wholesome treat. They are perfect as a healthy snack, quick breakfast bite, easy dessert, post-workout snack, and one of my favorite food ideas when I want something sweet, filling, and simple to make.
Ingredients
1 cup chickpeas, drained and rinsed
1 medium ripe banana
1/4 cup peanut butter
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder
1/4 cup chocolate protein powder
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup dark chocolate chips
2 tablespoons white chocolate chips
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Add the chickpeas, banana, peanut butter, maple syrup, vanilla extract, cocoa powder, protein powder, baking powder, and salt to a food processor.
3. Blend until the mixture is smooth and thick, scraping down the sides as needed.
4. Fold in the dark chocolate chips and white chocolate chips, saving a few for topping if desired.
5. Scoop the dough onto the prepared baking sheet and gently flatten each cookie slightly.
6. Bake for 10 to 12 minutes, until the tops are set and the edges are lightly firm.
7. Let the cookies cool on the pan for several minutes before serving.
Notes
Do not skip blending the chickpeas until fully smooth, because any large pieces can make the cookies grainy instead of soft and fudgy.
