Description
This healthy no-sugar watermelon sorbet is one of my favorite quick breakfast-style treats for hot days, even though it also works beautifully as a healthy snack or easy dessert. It is cold, fruity, refreshing, and made with simple ingredients, which makes it perfect for easy recipe lovers looking for light food ideas, summer dessert ideas, and naturally sweet frozen treats.
Ingredients
4 cups seedless watermelon, cubed and frozen
2 tablespoons fresh lime juice
6 fresh mint leaves
1 pinch salt
Instructions
1. Cut the seedless watermelon into cubes and spread them on a parchment-lined tray. Freeze until completely solid.
2. Add the frozen watermelon cubes to a food processor with the lime juice, mint leaves, and a pinch of salt.
3. Pulse several times to break up the fruit, then blend until the mixture becomes smooth, thick, and fluffy.
4. Scrape down the sides as needed so everything blends evenly.
5. Serve immediately for a soft sorbet texture, or freeze for 30 to 60 minutes for firmer scoops.
Notes
Use ripe watermelon before freezing it, because the natural sweetness of the fruit is what makes this sorbet taste its best without any added sugar.
