Ingredients

1 1/2 cups rolled oats

1/2 cup creamy nut butter (almond or peanut)

1/3 cup chopped nuts (almonds, walnuts, or pecans)

1/3 cup mixed seeds (pumpkin, sunflower, chia, or flax)

1/3 cup dried fruit (cranberries, raisins, or dates)

2 medium ripe bananas, mashed

3 tablespoons maple syrup or honey

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a large bowl, mash the bananas until smooth. Add the nut butter, maple syrup or honey, and vanilla extract. Mix until well combined.

3. Stir in the rolled oats, chopped nuts, mixed seeds, dried fruit, cinnamon, and salt. Mix until the dough is evenly blended and holds together.

4. Scoop out heaping tablespoons of dough, roll into balls, and flatten slightly. Arrange on the baking sheet.

5. Bake for 12–15 minutes, until the cookies are golden at the edges and set.

6. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.

7. Store in an airtight container at room temperature for up to 4 days, or refrigerate for up to 1 week. Freeze for longer storage.

Notes

For a vegan version, use maple syrup instead of honey.

Substitute seed butter and extra seeds for a nut-free cookie.

Add mini chocolate chips or coconut flakes for a flavor twist!
