Ingredients
2 medium zucchini, grated and squeezed dry
2 large eggs
1/2 cup all-purpose flour (or whole wheat flour)
2 green onions, finely sliced
1 clove garlic, minced
2 tablespoons chopped fresh parsley or dill
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup grated Parmesan or crumbled feta cheese (optional)
2 tablespoons olive oil or avocado oil, for frying
Instructions
1. Grate the zucchini, sprinkle with salt, and let sit for 10 minutes. Squeeze out as much liquid as possible using a clean kitchen towel.
2. In a large bowl, combine the drained zucchini, eggs, flour, green onions, garlic, herbs, pepper, and cheese if using. Mix well until a thick batter forms.
3. Heat the oil in a nonstick skillet over medium heat. Scoop heaping tablespoons of batter into the pan and flatten slightly.
4. Cook the fritters for 3–4 minutes per side, until golden brown and cooked through. Work in batches as needed.
5. Transfer to a paper towel-lined plate to drain excess oil. Serve warm with Greek yogurt, sour cream, or your favorite dip.
Notes
For the crispiest fritters, squeeze out as much water as you can from the zucchini before mixing.
Make them gluten-free by swapping the flour for your favorite gluten-free blend or chickpea flour.
Add extra veggies like shredded carrots or corn for variety—just drain well to avoid soggy fritters.
