Ingredients

8 large eggs

1 cup whole milk

12 ounces cooked breakfast sausage, crumbled

2 cups fresh spinach, chopped

1 cup mushrooms, sliced

1 cup shredded cheddar cheese

1 small onion, diced

1/2 cup red bell pepper, diced (optional)

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh chives, chopped (for garnish)


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. In a skillet over medium heat, cook the sausage until browned and cooked through. Remove and set aside.

3. In the same skillet, sauté the onion until translucent. Add mushrooms and cook until browned and tender, about 5 minutes.

4. Stir in the garlic, spinach, and red bell pepper (if using). Sauté until spinach is wilted. Remove from heat and let cool slightly.

5. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the shredded cheddar cheese.

6. Spread the sausage and vegetable mixture evenly in the prepared baking dish.

7. Pour the egg mixture over the top, making sure the ingredients are distributed evenly.

8. Bake for 35–40 minutes, or until the center is set and the top is golden. Let rest for 5 minutes before slicing.

9. Garnish with chopped chives and serve hot.

Notes

Make sure to fully cook and drain the sausage before adding it to the casserole.

You can substitute other cheeses, like mozzarella or pepper jack, for a different flavor.

This recipe can be prepared the night before, refrigerated, and baked in the morning.
