Herb-Crusted Christmas Beef Roast is the kind of easy recipe that makes a holiday table feel instantly special. Ingredients

2 1/2 to 3 pounds beef tenderloin roast

1 1/2 teaspoons salt

1 teaspoon black pepper

1 tablespoon olive oil

4 tablespoons unsalted butter, softened

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon Dijon mustard


Instructions

1. Take the beef roast out of the refrigerator 45 to 60 minutes before cooking so it can come closer to room temperature.

2. Preheat the oven to 425°F.

3. Pat the roast dry with paper towels, then season all sides with salt and black pepper.

4. In a small bowl, mix the softened butter, olive oil, garlic, rosemary, thyme, parsley, and Dijon mustard until combined.

5. Rub the herb mixture all over the beef roast, pressing it gently so it sticks well.

6. Place the roast on a rack in a roasting pan.

7. Roast at 425°F for 15 minutes to build a flavorful crust.

8. Reduce the oven temperature to 350°F and continue roasting for 25 to 35 minutes, or until the internal temperature reaches 130 to 135°F for medium-rare.

9. Remove the roast from the oven and tent it loosely with foil.

10. Let it rest for 15 to 20 minutes before slicing.

11. Slice and serve with the pan juices spooned over the top.

Notes

Do not skip the resting time after roasting, because slicing too early lets the juices run out and can make the beef less tender.
