Ingredients

5 pound prime rib roast

2 tablespoons kosher salt

1 tablespoon black pepper

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons olive oil

2 tablespoons unsalted butter, softened

1 tablespoon Dijon mustard


Instructions

1. Remove the prime rib roast from the refrigerator and let it sit at room temperature for about 2 hours. Pat it dry with paper towels.

2. In a small bowl, mix the kosher salt, black pepper, minced garlic, rosemary, thyme, olive oil, butter, and Dijon mustard until combined.

3. Rub the herb mixture all over the roast, coating every side evenly.

4. Preheat the oven to 450°F and place the roast fat-side up on a rack in a roasting pan.

5. Roast at 450°F for 20 minutes to develop the crust.

6. Reduce the oven temperature to 325°F and continue roasting until the internal temperature reaches 120°F to 125°F for medium-rare.

7. Remove the roast from the oven and tent loosely with foil. Let it rest for 20 to 30 minutes.

8. Slice and serve warm.

Notes

Do not skip resting the roast after baking, because slicing too soon will let the juices run out and the meat can turn dry.
