Ingredients
3 medium ripe bananas mashed
2 large eggs
1/2 cup plain Greek yogurt
1/4 cup pure maple syrup or honey
1/4 cup light brown sugar packed
2 tablespoons melted coconut oil or neutral vegetable oil
1 teaspoon vanilla extract
1 cup oat flour
1/2 cup whole wheat flour or all purpose flour
1/2 cup vanilla or unflavored whey protein powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1 teaspoon ground cinnamon
1/3 cup dark chocolate chips or chopped walnuts optional
Instructions
1. Preheat the oven to 350°F 175°C and lightly grease a 9×5 inch loaf pan or line it with parchment paper.
2. In a large mixing bowl mash the ripe bananas until mostly smooth.
3. Add the Greek yogurt eggs maple syrup or honey brown sugar melted coconut oil and vanilla extract and whisk until well combined.
4. Sprinkle the oat flour whole wheat or all purpose flour protein powder baking powder baking soda salt and cinnamon over the wet mixture.
5. Gently fold the dry ingredients into the wet ingredients just until no dry streaks remain being careful not to overmix.
6. Fold in the dark chocolate chips or chopped walnuts if using.
7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
8. Bake for 45 to 55 minutes or until the top is golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
9. Let the banana bread cool in the pan for 10 to 15 minutes then lift it out and transfer to a wire rack to cool completely.
10. Slice into 10 pieces and serve warm or at room temperature.
