Ingredients
6 large eggs
0.25 cup milk
0.5 cup shredded cheddar cheese
1 cup fresh spinach, chopped
0.5 cup cherry tomatoes, chopped
0.25 teaspoon garlic powder
Salt & pepper to taste
Non-stick spray or oil for greasing
Instructions
1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with non-stick spray or oil.
2. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until smooth.
3. Fold in the chopped spinach, tomatoes, and shredded cheddar.
4. Divide the mixture evenly into the muffin tin cups, filling each about 3/4 full.
5. Bake for 18–20 minutes or until set and slightly golden on top.
6. Let cool for 5 minutes before removing from the tin. Serve warm or cool completely for storing.
Notes
Use silicone muffin liners for easy release and cleanup.
Don’t overbake or the eggs may turn rubbery; check at 18 minutes.
Add cooked bacon or turkey sausage to level up the protein.
