Ingredients

3 1/2 cups bread flour

1 1/4 cups warm water

2 1/4 teaspoons active dry yeast

2 tablespoons granulated sugar

1 1/2 teaspoons salt

1 cup blueberries

1 tablespoon honey

1 egg


Instructions

1. Stir the warm water, active dry yeast, and granulated sugar together in a large bowl and let it sit until foamy.

2. Add the bread flour and salt, then mix until a shaggy dough forms.

3. Gently fold in the blueberries and knead the dough until smooth and elastic.

4. Place the dough in a lightly greased bowl, cover, and let it rise until puffed.

5. Divide the dough into 8 equal pieces, shape each piece into a ball, then poke a hole in the center and stretch into bagel shapes.

6. Let the shaped bagels rest for 15 to 20 minutes.

7. Bring a pot of water to a gentle simmer, add the honey, and boil each bagel for about 30 seconds per side.

8. Transfer the bagels to a lined baking sheet and brush with beaten egg.

9. Bake at 425°F for 20 to 24 minutes, or until deep golden brown.

10. Cool slightly before slicing and serving.

Notes

Do not add too much extra flour while kneading, or the bagels can turn dense instead of staying chewy and soft.
